Ever Manuel Caceres (Finca Los Cipreces), Osman Antonio Espinoza (Finca Loa Llanos) and Marvin Adali & Juliana Paz Flores (Finca El Mango) are the producers of the cherries for this lot. It is mainly made up of Caturra and Catuai varietals and is processed as fully washed. This is to showcase the particular terroir and micro-climate of the valley where the three farms are located. The valley itself is at the base of the Mogotón mountains
The processed cherries are transferred to Cafetos de Segovia, the dry mill located in Ocotal. This mill is run by sisters Ana and Martha Albir, who are 3rd generation producers and 1st generation mill owners. They usually start the drying in the patio, in the shade for 5-6 days and then in the sun. Moving the naturals every 3-4 hours, they pile the coffee at the hottest hours of the day to prevent damage to the drying beans.
