Agua Sarca is the legacy of 3 generations of Nicaraguan coffee producers. It borders a river & mountains, creating an important microclimate impacting the quality of the coffee. Isacio Albir's farm is 20 hectares including a nature reserve & wildlife. For the past 3 years, Isacio has worked with an agricultural engineer to improve the quality of the cherries. In 2020, Agua Sarca has achieved 17th place in the prestigious Nicaragua Cup of Excellence competition.
The recent dry mill addition, run by Martha & Ana, allows for production of quality coffee in large amounts. The coffee is delivered as wet parchment or cherries & then washed. Drying starts in the shade for 5-6 days, then full sun, with beans being moved every 3-4 hours.
Why No. 26? – Nicaragua boasts 26 volcanoes, 19 of which are active.
