This micro lot is made up of a number of a few small holders from the Piendamo region of Cauca as part of the COMEPCAFE Co-operative which was established in 2010. The Co-operative has 1400 farms spread across 7 areas in Cauca. They are traditionally planted with castillo and colombia with a small portion (5%) of caturra. The Co-op helps to support their members with technical support, commercialisation of the coffees, food security programs as well as a pension program looking to protect the producers in the future.
The coffees are pulped on the farms in traditional beneficios on small pulping machines before then being dry fermented in tiled tanks overnight for 12-16 hours. After this the coffees are then dried for 7- 10 days in parabolic tents on raised beds.
Why No.2 - We will always have a different finca (farm) from Colombia as our No.2. It was a decision we made early on, because coffee from Colombia was Eamonns favourite.
