El Palto is a 3 hectare lot owned by Jacinto Jara and his family, who live and work on the farm. It is located at 1900 masl and is planted with Catimor and Caturra trees with shade trees to help with drought and irrigation.. Four additional staff are employed from June to October during the harvest.
The cherry is picked, washed, pulped and fermented for 32hours. Washed again it is placed in solar tents for 15 days to dry. Once the harvest is complete all the coffee is taken to the main warehouse to sell. We pay 30% above market rate for the area for these beans as it improves the livelihood of the local farmers.
