The municipality of Inza sits high on a Colombian plateau called Macizo Colombiano. With altitudes of 2,000 masl this area is perfect for specialty coffee growing. The Inza group comprises of 80 producers and their families.
Once picked the coffee is pulped and then left to ferment for a day. It is then floated to remove immature beans & then take to parabolic tents or patios to dry. This takes 8-14 days depending on the weather.
This particular coffee is taken from the second half of the harvest in late June and July.
